Costco had wild coho on sale for 3.49 a pound. I bought 2 big fat ones. I have since my last smoking used the Bradley Smoker to do smoked salmon skewers. I got the idea from Ray's boat house and I used the same recipe and procedure on Salmon Universities website as I do for cold smoking but just hot smoke them.
